Bake Parlor Macaroni Twisted
1. Preheat the oven to 350°F.
2. Bring a large pot of salted water to a boil over high heat and cook the macaroni until al dente, about 8 minutes or according to package instructions. Drain and set aside.
3. In a large saucepan, melt butter over medium low heat; add flour, stirring constantly for 2 minutes until mixture is bubbly and slightly thickened but not browned. Add milk all at once and stir with a whisk until smooth; increase heat to medium-high and bring just to boiling point, stirring constantly with a whisk for 1 minute more (sauce will be very thick). Remove from heat; stir in salt, pepper and nutmeg until blended into sauce; then add cheese all at once, stir again until melted completely into the sauce (add more cheese if desired).
4. In an ungreased 9-inch baking dish, layer half of the cooked macaroni evenly on bottom; spread half of the cheese sauce over macaroni in dish; sprinkle with half of breadcrumbs mixed with Parmesan cheese if desired*. Then layer remaining macaroni evenly on top followed by remaining cheese sauce then topped off with remaining breadcrumbs/Parmesan mixture* as before.
5 Bake uncovered in preheated oven for 25 minutes or until bubbly around edges and lightly browned on top — enjoy! *Note: Feel free to use any type of topping you’d like here – such as crushed crackers or chopped nuts – just adjust your cooking time accordingly if using something where it won’t be necessary for it to bake that long
